This morning on Amazon’s Al Dente,  I wrote a blog post entitled “The State of the Onion.” In that post, I covered various trends in onion consumption and linked to a Frequently Asked Questions page on the National Onion Association’s website. I also linked to assocation’s  recipe for Slow Cooker French Onion Soup. They promote the soup as “The Super Easy Way to Make A Classic.”

Indeed, the recipe looked so simple that I decided to make it this morning. Wow! It’s a winner. Made in my All-Clad slow cooker, the recipe requires simple ingredients such as two pounds of yellow onions, canned beef broth, dried thyme, flour, sourdough bread, and parmesan cheese.

You might wonder why I’m writing about this recipe on the Woodall’s Family Camping blog, but I think the  recipe is perfect  for those of you who like to use your slow cookers while traveling in your camper or RV.  Onions are easily stored and transported in a camper. And, all of the ingredients are basic items that can be purchased in remote locations.   I also like this recipe because it can be assembled in seconds and sidesteps the tedious (and fattening)  task of browning the sliced onions in butter!
