    “Wacky Mac” Easy RVers Recipe

    Here’s a great fun and easy summer meal to make in the RV. No oven needed! I found a pasta product in the store called Wacky Mac and it looked like it would be fun and colorful. If ever there was something up my alley….hmmm. By the way, the dressing part of this mixture makes a really good salad dressing, too. Some salad dressing variations would be to try to use a different vinegar, herb, add garlic or add a splash of pepper sauce to the vinegar mixture. We are hooked on this and it is low calorie and cheap to make. Send me your most fun recipe for keeping the RV cool.

    For 2 servings

    4 oz dry Wacky Mac

    3 oz lean cooked ham, cubed

    ½ cup frozen peas

    1 Tbsp each; chopped onion, green pepper, red pepper, carrot and celery

    About 1/3 cup Vinegar dressing

    VINEGAR DRESSING

    ¼ cup white wine vinegar or golden balsamic

    Splash of white wine (optional)

    Splash of orange juice, about 1 Tbsp

    Splash of water 1 or 2 Tbsp

    Squeeze of lemon juice, about ½ Tbsp

    3 or 4 packets of stevia to taste

    1 tsp dill

    1 tsp Dijon mustard

    Dash of salt and pepper

    Cook and drain 4 oz Wacky Mac or other pasta favorite by package directions. The last minute, throw in the peas. Drain the pasta and pea mixture well. Add the rest of the chopped ingredients and pour vinegar dressing over all. Stir and refrigerate.
