Campfire Pies

                                      

My mom told me about these a couple of years ago and now we are hooked.  Every time my kids have friends camping with us they want to make them.  You will need a square sandwich cooker and a hot campfire with some nice coals.  There are five of us so we have 2 irons to make it go a little faster.

Ingredients-

 Bread (we prefer white or wheat, but any kind that isn’t too thin will work)

 Butter

 Cans of your favorite pie filling (cherry, apple, blueberry, etc)

 Brown sugar ( if using apple pie filling)

1- Butter two slices of bread.  Put one slice butter side down in one side of the iron.  (This is just like making a grilled cheese sandwich)

2- Add about 1/2 cup of your favorite pie filling.  If using apple sprinkle some brown sugar on top of the filling.  Try not to get too close to the edges of the bread.

3- Put the other slice of bread butter side up and then close the iron, making sure it is locked.

4- Put over the coals until golden brown.  The time will vary and you will get a feel for it after awhile.  It’s easier to make these when you have a little daylight so you can open it and check for browning.  Check them every couple of minutes until you get the hang of it. 

5-  They will be hot, so have a plate handy to put them on when they come off of the fire.  I use a knife and fork to eat mine because I don’t want to wait for it to cool off !

We liked them so much that we started getting creative and making lunch sandwiches too.   Tuna melts, bologna and cheese, even peanut butter and jelly.  You make them the same way as the pies….you just change the filling.
